Hi, I’m Nicky, Bar Manager at the wonderful Syrencot! Ever since I started here at the beginning of 2025, I’ve loved the creativity, energy, and attention to detail that go into delivering an amazing bar experience here.
Adding the personal touch
One of the best parts of my role is personalising the menu to each event or couple. Sometimes it starts with a simple question like “What’s your favourite holiday memory?” or “Do you have a go-to drink on a night out?” From there, we can build something unique.
I love creating standout moments; I remember making a strawberry daiquiri on the fly for a bride, at the request of her dad…she was so happy!

We love to put on a show
To me, it’s all about the artistry, flair, and delivering quality (both in taste and presentation). At the Syrencot bar, we love the showmanship. Cocktails shouldn’t feel boring or routine; they’re an experience. The right garnish, the perfect glassware, and a confident pour can turn a simple drink into something worth talking about. My favourite cocktail to make has got to be the Mojito… clapping mint is a vibe.
Syrencot’s signature
What sets Syrencot apart is the willingness to go the extra mile. We treat drinks like an art form. It’s not just about taste (though, obviously that’s essential) it’s also about the presentation, timing, and how a drink makes someone feel.
I love Syrencot in the summertime, so if Syrencot was a drink I think a classic Pimm’s would be a strong contender. However, our gardens are full of beautiful lavender, so maybe a Lavender Tini as well.

The feedback we receive says it all: guests are always impressed by the quality and care that goes into every glass. Whether it’s a summer wedding, Christmas party, or team away day, the goal is always the same: to make people feel looked after and to help them enjoy the moment.
